Hi H،salam , Venkat Pawar. & Lang'at Gideon ! All capsicums start out green, and grow to a mature size before changing colour. The colour change is caused by the breakdown of chlorophyll — which can cause them to turn white, lilac or purple before fully maturing to yellow or red coloured. Normally, all peppers would produce reddish or purplish colors as a signal that the fruit is mature. They do that by concentrating chemicals called anthocyanins near the surface of the pepper, making the fruits more visible and colorful to birds and other animals like us, who happen to see red and purple colors better than insects and many other creatures. Kind of a neat trick: Fruit-eating insects aren't attracted because they can't see red or purple very well, but creatures that have wings (like birds) or long legs (like humans) just can't resist when they see those colorful fruits. And the birds and humans, after eating, scatter those seeds far and wide. Humans, however, like to do funny things to plants. And when human breeders get ahold of something like a pepper, they may decide they prefer fruits that are pale at maturity, and don't have the stronger, richer flavors associated with red and purple anthocyanins.
